Most mobs are healed by potions of Healing and Regeneration just like the player. On the other hand, undead mobs take damage from these potions, and healing them requires a potion of Harming.

Mobs do not recover health. Refer to this link. However, if it is a fall damage trap, they should ideally be dying when they hit the bottom anyway so them recovering health should be irrellevant. If setup right they die on impact, and you have the ability to get in there and pickup their drops.
Minecraft Mobs And Their Health Points
Cows – A lot like sheep; they start “full” of milk, you milk them with a bucket, and they must eat grass before you can milk them again.

How do you regain health in Minecraft?
To avoid dying, you’ll have to build it back up. The easiest way to do this is by eating food. Eating Sweet Berries or Apples you find in forests and the like will heal you, though not very much. Once you have a house and a base set up, you’ll want to create a farm to grow Wheat.
Zombies are undead mobs, harmed by the status effect Healing, healed by the status effect Instant Damage and are unaffected by Regeneration and Poison.
